July is a heavy food month for me. Something about the heat makes you either want everything smothered in barbecue sauce or you want a cold bowl of something that makes you forget you've been sweating since 9 AM. So when I saw this roundup of the 16 best dishes from July, I was immediately in.

Campfire beans made the list, which tells you the vibe we're working with here. Not white tablecloth tasting menus, not a 14-course thing where someone explains foam to you. Campfire beans. The kind of thing you eat off a paper plate with a plastic spoon while your shoes are covered in dust. I love that a dish like that can stand shoulder to shoulder with restaurant food on a best-of list because half the magic of eating is context. Beans taste different when you're outside and the sun's going down and someone brought a guitar they can't really play.

And then on the complete opposite end of the spectrum: corn ice cream. If you haven't had it, sounds weird for about two seconds until you try it and realize corn is already sweet. It's basically a summer victory lap in dessert form. That these two dishes bookend the same list tells me July was a month of range. People weren't just eating one way.

I won't walk you through all 16 dishes because you should click through and discover them yourself, and also because I haven't eaten all of them and I refuse to pretend I have. That feels like a disservice to you if you're going to seek these out. But the list does capture something I think about a lot, which is that the best meals rarely come from the places you plan for three weeks in advance. They come from a roadside stand or a friend's backyard or a kitchen where someone decided to do something unexpected with an ingredient you wouldn't have thought to use.

My own July eating highlight: grilled peaches with burrata at a farmer's market about an hour outside of Asheville. I forget the exact town. I think about those peaches daily. The woman running the stall was using fruit from her own trees and she looked genuinely surprised that I was so excited about them. Ma'am, they were perfect peaches.

Month-end food lists remind you the good stuff isn't hiding. It's just out there, waiting for you to show up hungry.
